Ingredients
Dry Base
- 120 g rolled oats (gluten free if desired)
- 80 g ground almonds (or pumpkin / sunflower seeds for nut-free)
- 40 g vanilla flavour clean plant protein powder.
- Pinch of sea salt
Wet Mix
- 4 Medjool dates, pitted and soaked in hot water 10 mins
- 3 tbsp almond or cashew butter
- 2 tbsp pure maple syrup
- 1 tbsp coconut oil (melted)
- ½ tsp pure vanilla extract (optional)
Topping (optional but recommended)
- 60 g 70–85% dark chocolate, melted
- Flaky sea salt for sprinkling
Method
- Blend the Dates: Mash or blend soaked dates into a smooth paste.
- Combine: In a bowl, mix oats, ground almonds, protein powder and salt. Add date paste, nut butter, maple syrup, coconut oil and vanilla. Stir until a soft, cookie-dough-like texture forms. (If too dry, add 1 tbsp warm water.)
- Roll: Scoop and roll into small balls (about 1 tbsp each). Place on parchment and chill 30 mins to firm up.
- Finish (Optional): Dip in melted dark chocolate, then sprinkle lightly with sea salt. Set again for 10 mins in the fridge. Drizzle with extra nut butter if desired.
Tips
For a nut-free version:
Replace ground almonds and nut butter with pumpkin or sunflower seeds and seed butter. To make more budget-friendly; swap Medjool dates for standard dried dates (soaked well), use supermarket own oats and skip the chocolate dip, rolling bites in cocoa powder instead.
