Easy Buckwheat Pancakes

A vegan, sugar free alternative perfect for Shrove Tuesday - Buckwheat Pancakes.

INGREDIENTS

METHOD

1. Place the flour in a large bowl. Open and mix the contents of two capsules of Viridian Organic Maca. Add the almond milk, a pinch of salt, almond butter, maca and 1 teaspoon of coconut oil, and the hot water. Mix thoroughly.

2. Heat 3 tablespoons of coconut oil in a large frying pan or on a griddle over a medium heat. Pour a ladle full of batter onto the an and cook both sides until golden brown.

3. Enjoy with your favourite filling! We chose banana, blueberries and strawberries.

You can even boost it with your favourite protein powder and extra fruits to make it an extra fibrelicious dish.
